Aloo Gobi

Aloo Gobi is a traditional Indian is which is usually served as an accompaniment to meat based curries. Impress your friends by cooking this recipe next time you have a curry night. They won’t believe you made it yourself.

INGREDIENTS
2 tbsp vegetable oil
1 tsp cumin
1 ½ tsp minced garlic
1 tsp ginger paste
2 potatoes, cubed
½ tsp ground turmeric
½ tsp ground paprika
½ tsp ground cumin
1 tsp garam masala
Pinch of salt
600g cauliflower
1 tsp chopped coriander

METHOD
1. Heat the vegetable oil in a large pan at a medium heat.
2. Add the cumin, garlic and ginger. Stir.
3. Cook for 1 minute until browned.
4. Mix in the potatoes, turmeric, paprika, garam masala and salt.
5. Cover the pan and cook for 8 minutes.
6. Add the cauliflower and coriander to the pan.
7. Turn down the heat and simmer.
8. Cook for a further 10-15 minutes until the potatoes are fully cooked.
9. Serve.
