Apple and Ginger Soup

Apple and Ginger soup is perfect for these cold, dark, autumn evenings, and apples are in season right now so it’s a great time to have make this soup.

If you don’t have cooking apples, then normal eating apples will suffix, however you may need to check the seasoning more carefully, and possibly add a little white wine vinegar if too sweet. 

Ingredients
4 cooking apples, peeled and sliced
3cm fresh ginger, grated
1 onion, chopped 
2 tbsp olive oil
4 medium white potatoes, peeled and sliced 
3½ pints water

  1. Heat oil and sweat the first five ingredients for about 5-8 minutes until soft but not brown.
  2. Season with salt and pepper and add the water.  Bring to simmer and cook for 15-20 minutes. Liquidise.
  3. Serve with a swirl of cream or natural yogurt.
