Avocado and Cucumber Sushi

Sushi is becoming a more and more popular food. Celebrities love the stuff and it is not surprising as it is so healthy and nourishing for the body. It is also very cool and trendy and makes great appetizers for a party or special occasion. Below is one of my favourite sushi recipes which is a great dish for vegetarians as well as sushi fans.

INGREDIENTS
300 ml water
190g sushi rice
50 ml rice vinegar
1.5 g salt
4 sheets nori
½ a cucumber thinly sliced into strips
1 avocado, sliced and pitted

METHOD
1. Place the sushi rice and water into a pan and bring to the boil.
2. When boiling, cover the pan and reduce the heat.
3. Simmer for 20 minutes until the water has been full absorbed into the rice.
4. Take off the heat and stir in the salt and vinegar. Leave to cool.
5. Place a sheet of nori onto a bamboo sushi mat.
6. Spread the rice onto the sheet so that it is evenly spread but leave half and inch at the bottom free from rice.
7. Place the cucumber and avocado on top of the rice in an even manner.
8. With the mat, roll, unroll and roll the sushi again and again until a tight roll is formed.
9. Cut into slices and serve.
