Baked Chicken and Cheese

Chicken is such a versatile meat and is one of the most popular foods today. This recipe for baked chicken and cheese is a great comfort food and is so simple to make. It is an ideal supper dish to sit down to with family. You can use any cheese you like for this recipe, so, if you have a particular favourite, you can substitute the cheddar for that.

INGREDIENTS
4 chicken breasts, halved
400g cheese, sliced
1 tin cream of chicken soup
4 oz milk
4 oz sour cream
12 ounce herb breadcrumbs
2oz butter, melted
6 mushrooms, sliced
1 green pepper
Parsley to finish

METHOD
1. Grease a baking tin with butter and place the chicken breasts into the tin.
2. Place a slice of your favourite cheese on top of each piece of chicken.
3. In a bowl, mix the cream of chicken soup, milk and sour cream together.
4. Pour the soup mix over the chicken.
5. On top of the soup, add a layer of the herb breadcrumbs to make a delicious crust.
6. Pour the melted butter over the top.
7. Cover the tin with aluminium foil and cook at 180 degrees centigrade for 30 minutes.
8. Remove the foil and cook for an additional 30 minutes.
9. Serve with mashed potatoes.
