Chicken, lemon, and mushroom pasta

This is a great pasta dish that will brighten up your day, even if it’s steaming down with rain outside. Quick, healthy, and fairly cheap to make too.

Ingredients (serves 2):

400g of chicken breast cut into 2 inch pieces
300g of brown mushrooms, sliced
Juice and zest of 1/2 lemon
1 tsp of fresh thyme
1 clove of garlic chopped finely
A splash of white wine
30g of butter
75g dried pasta per person
Olive oil

  1. Boil a pan of water and cook as per instructions.  Meanwhile heat a pan with some olive oil.
  2. Fry the chicken for 3-4 mins.  Add the garlic, thyme, and mushrooms and cook for a further 4 mins.
  3. De glaze the pan with a splash of white wine.  Drain the pasta.
  4. Add the butter to the chicken and mushrooms, and serve with the pasta.
