Chilled Lemon Soup

This is a very healthy soup that is great for the summer - it’s cold, lemony, and refreshing!

Really good if you need to shed some weight a week before your beach holiday! (Like me)

Ingredients:
1 litre vegetable stock
500ml dry cider
2 ouncesĀ  brown rice
salt and pepper
2 lemons, juiced, rind grated
2 tablespoons chives, snipped
4 thin lemon slices to garnish

  1. Simmer the cider, stock, brown rice, salt, pepper and lemon rind for 40 minutes in a saucepan with a lid.
  2. Puree and return to the pot. Add the lemon juice and simmer gently.
  3. Chill in the fridge til cold.
  4. To serve, scatter with the chives over and serve with a slice of lemon.
