Chilled Lemon Soup

This is a very healthy soup that is great for the summer - it’s cold, lemony, and refreshing!
Really good if you need to shed some weight a week before your beach holiday! (Like me)
Ingredients:
1 litre vegetable stock
500ml dry cider
2 ouncesĀ brown rice
salt and pepper
2 lemons, juiced, rind grated
2 tablespoons chives, snipped
4 thin lemon slices to garnish
- Simmer the cider, stock, brown rice, salt, pepper and lemon rind for 40 minutes in a saucepan with a lid.
- Puree and return to the pot. Add the lemon juice and simmer gently.
- Chill in the fridge til cold.
- To serve, scatter with the chives over and serve with a slice of lemon.
