Cocoa - The secret ingredient

It is widely seen that cocoa is generally an ingredient of sweet dishes, cakes, and biscuits.  However a few years ago I found out that cocoa can be used as an ingredient in chill-con-carne.

Adding a level teaspoon of unsweetened cocoa to your standard chilli-con-carne recipe will give it added depth, flavour, and colour.  Sometimes it really is the ingredient that you need when something is missing in a rich, spicy dish such as chilli-con-carne.

Cocoa works well in chilli-con-carne as the rest of the ingredients are quite strong (cumin, paprika, chilli etc), and the cocoa’s flavour will ‘move to the back’ the flavour base and produce a nice, warm, savoury boost to the depth of the dish.

The same can be achieved with 70% cocoa chocolate.  Try it sometime, you will be impressed!
