Creamed leaks

This is a great side dish which works great with fish or chicken dishes, and is fairly healthy is you use low-fat creme fraiche.

Ingredients:

1kg of trimmed leeks, sliced into 1 cm portions
salt & pepper
25g butter
150ml creme fraiche
Freshly grated nutmeg (or ground if not)

  1. Boil the the leeks in salted water for 7-10 mins until just tender. Drain and plunge into cold water to stop the cooking process.
  2. After 10mins rest time in the cold water, drain and dry in kitchen paper.  Put the leeks into a blender and pulse util roughly chopped up.
  3. Remove half from the blender and set aside.  Blend the remaining until smooth.
  4. Add ALL the leeks to a hot frying pan, and stir in the creme fraiche and season.  Heat til bubbling and serve with sprinked nutmeg.
