Ecuadorian hot sauce (Aji criollo)

Hot sauce Aji criollo is a Ecuadorian hot sauce or salsa which can be used with many different dishes.

It is hard to say how spicy it will end up as this all depends on the chillies you use, and whether or not you remove the seeds from the chillies. If you can find them, use big plump fresh jalapenos or chili peppers, (or use the chopped jar type if you like).

Serve with Mexican food such as Fajitas etc, or as a dip with crudites. It should be kept in the fridge, and used within three days.

Ingredients:

4 hot peppers/jalapenos/plump green chillies
½ bunch of coriander (stems and leaves)
½ cup of water
3 garlic cloves
Juice from ½ lime or lemon
3 tbs finely chopped white onion (spring onions can also be used)
Salt

  1. Combine the hot peppers, coriander, water, garlic cloves and lime juice in the blender and blend well.
  2. Add the chopped white onions and salt to taste.
