Low carbohydrate Chocolate Cheesecake

As summer begins to draw closer and closer, many of us decide to start a new healthy diet to get our bodies into shape for days on the beach and a low carb diet is a great way of losing a few pounds. For anyone who enjoys a good dessert and has a sweet tooth, low carbohydrate diets can be hard. There are, however, many low carbohydrate desserts which are tasty but not too fattening that your diet will be ruined. Below is a very tasty recipe for low carb chocolate cheesecake which is ideal for sweet toothed people.
Chocolate Cheesecake
INGREDIENTS
8 oz low carbohydrate cookies (bashed, so that they are crumbs)
8 oz sugar replacement (I use splenda)
4 oz melted butter
24 oz low fat cream cheese
3 eggs
8 oz sour cream
4 oz chopped almonds
9 oz melted low carb dark chocolate
2 tablespoons baking flour
METHOD
1. In a bowl, mix the cookie crumbs and butter together.
2. Add 3 tablespoons of sugar substitute and the nuts.
3. Press this mixture into a cheesecake tin so that it is tightly and evenly packed. Chill.
4. Whip egg whites until they form stiff peaks.
5. In a separate bowl, mix the flour, sour cream and cream cheese together and add 8 0z of splenda.
6. Add egg yolks to the cheese mix one at a time.
7. Gently fold the egg whites into the mix.
8. Add the melted chocolate to the mix and then spread over the base you prepared earlier.
9. Bake for 60 minutes at 180 degrees centigrade.
10. Chill and serve.
