Make Healthy KFC Chicken at home

This home version of KFC chicken is fairly healthy thanks to it being baked rather than fried.
The skin still goes nice and crispy, and the meat stays moist. However, you can deep fry the chicken with this recipe if you like, just fry rather than bake at step 5.
Try and use an oven tray with a bottom grill (as shown in picture), as this will help crisp the chicken more evenly.
Ingredients:
4 chicken thighs
4 chicken drumsticks
Oil, about half a cup
2 cups flour
1 tablespoon salt
1 teaspoon ground black pepper
1 & 1/2 teaspoons paprika
1/2 teaspoon dried powdered thyme
1/2 teaspoon dried oregano
1/2 teaspoon dried powdered rosemary
1/2 tsp. garlic powder
1/4 tsp. onion powder
- Pre-heat the oven to 200C/Gas mark 6.
- Mix the flour and all spices together a large bowl.
- Coat all the chicken pieces with the oil. The entire surface of the chicken should be well covered.
- One by one, press each chicken piece into the flour/spice mix on all sides until the chicken is completely covered.
- Lay the chicken pieces on an oven tray and cook for 30-40mins. Turn over half way through cooking.
- To test if the chicken is cooked, stick a knife into the middle the biggest chicken piece, if the juices run clear then they will be cooked throughout.

top tip! - to get really tasty plump white chicken try poaching it in a pan of milk first for about 20 mins. then double dip in egg and your flour/spice mix. then fry/bake to crisp up the outside. hmmmmmmm.

Uncle B, keep an out for some more healthly versions of ‘junk food’ in the future.

or you could just go and buy kfc from the local shop. heaps quicker and most likely tastier
