Melted cheese tortillas are a great topping for soup

The other night I made the amazing Sweetcorn Chowder with melted cheese covered tortilla chips, and as per usual, it was amazing.  Seriously if you haven’t tried it yet, then please do as it is one of the nicest, quick-dishes I have cooked this year.

Last night I made a standard Carrot and Coriander soup and I thought I would try having cheese-covered tortilla chips with this soup.

So I got some plain salted tortilla chips, spread them out on a baking tray, covered them in strong, grated cheddar cheese and put them in a hot oven for six minutes.

Unsurprisingly the cheese-covered tortilla chips went really well with the Carrot and Coriander soup, and would definatly recommend this.
