Pecan and Coconut Brownies

Chocolate brownies are one of my favourite sweet treats but they do have a bit of a reputation as being for children so I decided to give them a more adult twist for a dinner party I was hosting and this recipe went down a treat with all my friends. Hope you like it.

INGREDIENTS
1 pack of fudge brownie mix (any brand is fine)
4 oz water
4 oz vegetable oil
1 egg
1 can coconut frosting (can be bought at most supermarkets or baking shops)
4 oz pecans, chopped
8 0z sour cream
4 oz chocolate chips

METHOD
1. Heat the oven to 180 degrees centigrade.
2. Grease a brownie pan with oil or butter.
3. In a fairly large bowl mix the egg and brownie mix together with the water and oil.
4. Beat the mixture well until a batter is formed.
5. Add the sour cream and coconut frosting to the mixture and combine thoroughly.
6. Pour the brownie mixture into the pan and spread evenly.
7. Sprinkle the choc chips and pecans on top of the batter.
8. Bake for roughly 40 minutes. The brownies are done when you can stick a toothpick into them and remove it without any mixture sticking to it.
9. Cool before cutting into squares and serving.
