Peking Duck Recipe

Chinese takeaway is now the most popular food in Britain, overtaking the Indian curry for the first time in many years. Takeaway food can be expensive and often contains nasty additives and MSG. Making your own Chinese food is easier than you might think and can be much healthier than takeaway versions. Why not try out the recipe below for a great Chinese meal.
INGREDIENTS
1 duck, whole
2 litres water, boiling
4 tablespoons honey
2 tablespoons soy sauce
3 tablespoons five spice
2 tablespoons brown sugar
SAUCE INGREDIENTS
2 tablespoons sesame oil
5 tablespoons hoi sin sauce
5 tablespoons caster sugar
5 tablespoons water
1 tablespoon soy sauce
½ tablespoon cornflour
PANCAKE INGREDIENTS
6-8 ready made pancakes
3-4 spring onions, shredded
½ cucumber, shredded
METHOD
1. Put a rack onto a roasting tin and place the duck on to it.
2. Pour hot water over the duck and leave until drained.
3. Remove water and leave the duck until it has dried out.
4. Mix the honey, soy sauce, five spice and brown sugar together in a bowl.
5. Brush over the duck and inside the duck with the sauce.
6. Leave the duck to dry again.
7. When dry recoat with the sauce.
8. Preheat oven to 190 degrees C.
9. Cook duck for 30 mins, turn then cook for an additional 30 mins.
10. When cool, joint the duck and slice the meat.
11. In a wok, add hoi sin, sesame oil, soy sauce, cornflower and caster sugar over a medium heat with water.
12. Simmer and stir until thick.
13. Heat the pancakes in a bamboo steamer or a small frying pan for 3 minutes.
14. Spread pancakes with sauce.
15. Add spring onions and cucumber to pancakes.
16. Add duck and roll.
17. Serve.
