Sandwich Special : Carrot and hummus

A lot of people get stuck at what to put in their sandwiches and usually end up eating the same thing over and over again.  This can be especially boring when you make sandwiches to take to lunch or school. 

So in over the next few posts, I will be writing ideas and guides for different sandwiches which I think most people will really like if the try them. 

First up, a classic sandwich that is all about texture contrast, clean taste, and getting one of your five-a-day vegetables.

  1. Grate one large carrot and sprinkle with some salt.  Set aside on a wood chopping board or on some kitchen towel.
  2. Bread that contains seeds and nuts goes best here if you can get it, especially brown/wholemeal.  Spread a generous amount of hummus onto each piece of bread you use.  Sprinkle some black pepper over the hummus.
  3. Add the grated carrot and you’re done.
  4. Sprinkle over some chilli powder if you want it a little spicy.
