Spanish Potato Wedges

These Spanish wedges are great as they are so easy to, and they also go well with most kind of meats and fish.

Ingredients:

8 red potatoes, quartered (wedges) (leave skins on )
1 tsp turmeric
1 tsp paprika
1 tsp cayenne pepper
1 tsp salt
2 tbsp olive oil
1 tbsp parsley, chopped

  1. Add the potatoes to a large pan of boiling water, and boil for 10 mins until just soft and tender.  Drain and place in a large mixing bowl.
  2. In a small bowl, mix the turmeric, paprika, cayenne, and salt. Set aside.
  3. Pour the olive oil over the potatoes, then the spices, and toss to coat.
  4. Pour the entire mixture into a roasting tray and bake for around 30mins or until the potatoes go nice and crispy.
