Spanish Potato Wedges

These Spanish wedges are great as they are so easy to, and they also go well with most kind of meats and fish.
Ingredients:
8 red potatoes, quartered (wedges) (leave skins on )
1 tsp turmeric
1 tsp paprika
1 tsp cayenne pepper
1 tsp salt
2 tbsp olive oil
1 tbsp parsley, chopped
- Add the potatoes to a large pan of boiling water, and boil for 10 mins until just soft and tender. Drain and place in a large mixing bowl.
- In a small bowl, mix the turmeric, paprika, cayenne, and salt. Set aside.
- Pour the olive oil over the potatoes, then the spices, and toss to coat.
- Pour the entire mixture into a roasting tray and bake for around 30mins or until the potatoes go nice and crispy.
