Tortellini with pesto and chicken

Everyone should know that pesto is one of the most useful ingredients to have for any quick pasta dish, and here is a recipe of mine from a supper I cooked last night.

Ingredients (serves 2):

200g of filled tortellini (cheese filled preferably)
2 chicken breasts, sliced
Quarter a jar of basil pesto
Olive oil
1 lemon

  1. Get a pan of hot water on the hob, ready for the tortellini.
  2. Heat some olive oil in a pan, and fry off the chicken.
  3. Mean while place the tortellini in the boiling water - boil according to packet instructions.
  4. Add the pesto to the chicken in the pan, and stir.
  5. Serve the pesto chicken on top of the drained tortellini, and squeeze the juice of a lemon over.
