Your fridge owes you a great pasta dish

This weekend I didn’t get to do a decent food shop and ending up coming home last night with no plan for dinner. It’s times like this when pasta and any left-over fridge items come in to their own.
I will show you the ingredients I used for my pasta supper, but what I’m really trying to show you is that it’s so easy to knock up a nice pasta dish with any ingredients, you just need a little bit of imagination!
Ingredients I used (serves 2):
3 chipolata sausages, sliced into chunks (I had these in the freezer)
1 pepper (I used an orange one)
10-15 cherry tomatoes, half of them halved, the other half left whole
10 or so green olives
1 tbsp of basil pesto
A clove of garlic
Half a lemon
Some cheddar cheese, grated
Olive Oil
- Put some pasta on the boil, I used spagetti
- Fry off the pepper, sausages and garlic in some hot olive oil until the sausages are cooked and the peppers are going soft.
- Add the olives and tomatoes and continue to cook for 2-3 mins. Taste for seasoning.
- Squeeze the lemon juice over the ’sauce’. Drain the pasta.
- Mix the pesto up with the pasta until the all the pasta is coated.
- Serve the pasta with the sauce on top and sprinkle over the cheese and some black pepper.
