Your fridge owes you a great pasta dish

This weekend I didn’t get to do a decent food shop and ending up coming home last night with no plan for dinner.  It’s times like this when pasta and any left-over fridge items come in to their own.

I will show you the ingredients I used for my pasta supper, but what I’m really trying to show you is that it’s so easy to knock up a nice pasta dish with any ingredients, you just need a little bit of imagination!

Ingredients I used (serves 2):

3 chipolata sausages, sliced into chunks (I had these in the freezer)
1 pepper (I used an orange one)
10-15 cherry tomatoes, half of them halved, the other half left whole
10 or so green olives
1 tbsp of basil pesto
A clove of garlic
Half a lemon
Some cheddar cheese, grated
Olive Oil

  1. Put some pasta on the boil, I used spagetti
  2. Fry off the pepper, sausages and garlic in some hot olive oil until the sausages are cooked and the peppers are going soft.
  3. Add the olives and tomatoes and continue to cook for 2-3 mins.  Taste for seasoning.
  4. Squeeze the lemon juice over the ’sauce’.   Drain the pasta.
  5. Mix the pesto up with the  pasta until the all the pasta is coated.
  6. Serve the pasta with the sauce on top and sprinkle over the cheese and some black pepper.
